Asian Sesame Dressing

8 oz water
1 oz nutritional yeast
4 oz cashews
4oz balsamic vinegar
1 T minced garlic
1 oz apple cider vinegar
2 t sesame seeds
2 t crushed red pepper
2 t parsley

Mix all ingredients with the exception of the last 3 until smooth. Gently mix in remaining ingredients. I made this dressing for thanksgiving salad I made and it was a hit with my biggest critic "my wife" :).

Apple Strudel


Ingredients:
1/4 cup apple juice
3/4 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 cup vanilla soy, hemp or almond milk
3 apples, peeled, cored and chopped
1/4 cup raisins, chopped
1/2 cup old fashioned rolled oats or oatmeal flakes
1/4 cup ground raw almonds
1/2 cup black cherries pitted and quartered

Vegetarian Chilli

So when cooking non-ETL Chilli is one of my most favorite dishes. I take chilli making seriously, so much so I even participated in a chilli cook-off at Texas Culinary Academy and walked away with a formidable 3rd place competing against numerous other skilled culinary enthusiasts. So on my current quest to identify ETL alternatives to my favorite fall season comfort foods, this was one recipe I was determined to not skimp on flavor, texture, and overall satisfactory flavor on.

Black Bean Enchiladas


Ingredients:
1 medium green bell pepper, seeded and chopped
1/2 cup sliced onion
8 ounces tomato sauce, divided, no or low sodium
2 cups cooked black beans
1 cup frozen corn kernels
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon onion powder
1/8 teaspoon cayenne pepper
1 tablespoon chopped fresh cilantro
6 corn tortillas
Vegetarian Chilli (optional)

Lasagna


This Lasagna recipe was a success with myself and company we had over to share with. It made plenty for the four of us and with about half left over.

Russian Dressing

This recipe is a very vibrant dressing and goes great on salads. I also can imagine using this as a condiment for a veggie burger.

Ingredients:
1 4-ounce can tomato paste, no salt
4 tablespoons Raw Almond Butter
1/4 teaspoon chili powder
1/4 cup unsweetened soy milk
3 tablespoons ketchup, low sodium
1 tablespoon of Malt Vinegar

Brownies


Ingredients:
1/2 cup Cocoa
2 teaspoons vanilla extract
2 cups black beans drained
1 banana
2 tablespoons ground flax seed
1 teaspoon baking soda
1 cup unsweetened applesauce
2 cups pitted dates
3/4 cup whole wheat flour
1 cup walnuts (optional)
Directions:

Caesar Dressing Recipe

This imitation Caesar dressing is Eat to Live / Eat for Health friendly.
Ingredients:
1 oz minced garlic
10 oz unsweetened soy milk
3 oz raw cashews
1/4 oz nutritional yeast
1 oz Dijon mustard
1/8 oz lemon juice
black pepper to taste
1 pinch cayenne pepper

Being a graduate from Texas Culinary Academy I appreciate fine foods and different methods of cooking. One thing that I had never done before was to make a green smoothie. Ok still going strong down to 212lbs ! And here comes the challenge every diet or change in eating brings. Holidays and Celebrations. My Birthday came around and I chose to eat my favorite cake - Lemon with Lemon frosting, and it was Great! I had fun with friends and celebrated to my hearts content. Then you know what happened next? Wrong I easily went back to my newly found healthy eating habits.
